Cocktail Daily – Krakatoa & Café-Moutarde Banane | Danico, Paris

Cocktail Daily – Krakatoa | Café-Moutarde Banane | Danico, Paris

Tucked away behind Daroco, an Italian restaurant near Galerie Vivienne in Paris's 2nd arrondissement, Danico has established itself as one of the city's most distinctive cocktail destinations.

Opened in 2016 with acclaimed bartender Nico de Soto among its founders, the bar occupies part of a building that once housed Jean Paul Gaultier's flagship boutique. Over the years, Danico has developed an international reputation for inventive flavor combinations and cocktail menus inspired by travel. In 2026, it ranked No. 26 on The World's 50 Best Bars list.

Finding Danico is part of the experience. Guests first make their way through the lively Daroco restaurant before reaching the more intimate bar at the back. The space is compact but thoughtfully designed, with clean geometric lines, a double-height ceiling, and mirrored walls that create an unexpected sense of depth. The aesthetic is contemporary and understated, balancing minimalist design with a quiet sense of luxury.

Danico opens at 5 p.m., and during this visit, the room filled almost immediately after opening. Despite the busy start, the team remained warm, engaging, and full of personality, bringing an easygoing energy to an otherwise polished setting.

Travel and culinary exploration have long shaped Danico's cocktail philosophy. Since introducing its Xplorer series in 2023, the team has explored destinations including Indonesia, Mexico, Japan, India, and Peru, drawing on local ingredients and food traditions to develop original cocktail creations.

To celebrate its tenth anniversary in 2026, Danico introduced the 10 Years Best Of Menu, bringing together 30 standout cocktails from its first decade, with three selections representing each year.

The menu itself is part of the appeal. Its restrained graphic design is paired with playful illustrations that give each drink a distinct identity. Alongside the ingredients, two additional details stand out: Taste and Stock.

The Taste section offers a brief description, sometimes with a touch of humor, while Stock indicates availability. Some returning favorites are offered in limited quantities, while others are simply marked Unlimited.

Together, these details make the menu feel less like a conventional drinks list and more like a curated retrospective of Danico's first ten years.

Two cocktails in particular stood out during this visit, each delivering an unexpectedly complex and memorable drinking experience.

Krakatoa

Peanut Butter Distillate / Planteray 3 Stars Rum / Palm Sugar / Mango / Pineapple / Cucumber / Sweet Potato / Lime / Soy Milk

Cocktail Daily – Krakatoa | Café-Moutarde Banane | Danico, Paris

Originally created for Danico's Indonesia-inspired Xplorer menu, Krakatoa takes its name from the famous Indonesian volcano. Inspired by the flavor profile of rujak, an Indonesian fruit dish, the cocktail brings together tropical fruits, vegetables, and other ingredients in the form of a clarified Milk Punch.

In the anniversary menu's Taste section, the team recalls Nico de Soto's reaction during a tasting:

“Best milk punch I ever tried.”

After tasting it, that enthusiasm becomes easy to understand.

What makes Krakatoa particularly impressive is how clearly its individual flavors come through. Despite the number of ingredients and the clarification process, the cocktail never feels like an indistinct blend. Instead, each element contributes something recognizable to an exceptionally well-integrated composition.

Mango and pineapple establish a fresh, tropical sweetness, supported by the rounded richness of palm sugar. Peanut butter distillate introduces a gentle nuttiness that seems to wrap around the other ingredients, bringing softness and cohesion to the overall profile. Cucumber adds a subtle vegetal dimension, while sweet potato contributes another layer beyond the fruit-forward foundation.

The defining element, however, is the soy milk.

Rather than disappearing into the cocktail's sweeter components, its distinctive aroma cuts through the mango, pineapple, and peanut notes with remarkable clarity.

It feels almost like a precise aromatic line running through a much softer composition, separating flavors that might otherwise merge into one another.

This is what gives Krakatoa its unusual sense of depth.

The tropical fruit, delicate nuttiness, and distinctive soy character remain closely connected without losing their individual identities. As the flavors move across the palate, different elements come forward, creating a drinking experience that feels layered rather than simply complex.

Lime provides the acidity needed to keep the richer ingredients in balance, while Planteray 3 Stars Rum maintains a recognizable presence beneath the fruit and softer textures.

The result is far more than an exercise in combining unconventional ingredients. Krakatoa demonstrates how complexity can be carefully organized, allowing contrasting flavors to coexist without sacrificing clarity or balance.

Tasting Notes

Aroma: Fresh tropical fruit and soft peanut notes are joined by the distinctive vegetal aroma of soy milk, creating an immediately recognizable aromatic profile.

Palate: Mango and pineapple provide a bright, rounded sweetness, supported by a gentle peanut character. The distinctive soy notes weave through the fruit, while cucumber and sweet potato add further dimensions. The rum remains present within the overall composition.

Finish: Soy and tropical fruit notes continue to contrast, with a soft nuttiness bringing the different elements together.

Overall: An exceptionally memorable clarified Milk Punch. Rather than allowing its many ingredients to become indistinguishable, Krakatoa uses the distinctive character of soy milk to create definition and depth. A sophisticated example of flavor integration that manages to be both complex and remarkably clear.

Café-Moutarde Banane

Black Mustard Seeds Distillate / Coffee Liquor / Espresso / Banana

Cocktail Daily – Krakatoa | Café-Moutarde Banane | Danico, Paris

If Krakatoa uses soy milk to bring definition to a tropical fruit cocktail, Café-Moutarde Banane applies a similar creative approach to an entirely different classic: the Espresso Martini.

Featured in the 2022–2023 section of Danico's tenth-anniversary menu, the cocktail comes with a particularly confident description in its Taste section:

“Best Espresso Martini Ever.”

At first glance, the ingredients suggest a coffee cocktail with a banana twist. But Café-Moutarde Banane is considerably more interesting than that.

Espresso and coffee liqueur form the foundation, delivering the familiar richness and depth associated with an Espresso Martini. Banana adds body and a rounded softness, making the overall composition feel fuller and more cohesive.

The ingredient that truly transforms the drink is black mustard seed distillate.

Black mustard seeds are far more commonly associated with savory cooking than with coffee cocktails. Their inclusion might initially seem unusual, yet here they provide the defining character of the entire drink.

On the palate, the mustard seed distillate introduces a distinct aromatic edge that moves through the richer coffee and banana flavors.

It does not overwhelm the espresso, nor does it simply make the cocktail spicy. Instead, its unusual character repeatedly emerges between the familiar coffee notes and the softer banana profile.

Imagine a sharp, aromatic thread weaving through the richness of espresso, constantly revealing new dimensions within an otherwise familiar flavor.

That is what makes Café-Moutarde Banane so compelling.

The coffee remains the central element, but the mustard seed distillate creates a contrast that prevents the cocktail from becoming one-dimensional. Banana supplies enough softness to keep this unusual addition in harmony with the rest of the drink, while the espresso continues to provide a recognizable foundation.

The experience is surprisingly dynamic. Different flavors seem to move in and out of focus, creating a level of complexity that goes well beyond the conventional Espresso Martini.

What makes the cocktail particularly successful is that its unconventional ingredient serves a genuine purpose.

The black mustard seed distillate is not merely an unexpected addition designed to attract attention. It fundamentally changes how the coffee and banana are perceived, introducing an aromatic contrast that makes the entire composition more engaging.

Café-Moutarde Banane retains everything appealing about a rich espresso cocktail while offering an entirely different way to experience those familiar flavors.

Tasting Notes

Aroma: Rich espresso and roasted coffee notes form the aromatic foundation, with black mustard seed distillate introducing an unusual savory-spiced character.

Palate: Concentrated coffee flavors and the rounded softness of banana create a full, cohesive base. Distinctive mustard seed aromatics repeatedly emerge, bringing contrast and an evolving sense of complexity.

Finish: Coffee richness and the unusual aromatic spice continue to interact, leaving a more layered impression than the familiar sweetness of a conventional coffee cocktail.

Overall: An exceptional interpretation of the Espresso Martini. The black mustard seed distillate is far more than a novelty; it reshapes the cocktail's flavor structure, allowing coffee, banana, and aromatic spice to work together in a distinctive and memorable combination.

Although Krakatoa and Café-Moutarde Banane explore very different flavor profiles, they reveal a remarkably consistent approach to cocktail creation at Danico.

Rather than simply adding more ingredients, both cocktails identify one distinctive element capable of transforming the entire composition.

In Krakatoa, soy milk brings definition to the softer, sweeter layers of tropical fruit and peanut. In Café-Moutarde Banane, black mustard seed distillate introduces an unexpected aromatic dimension to the richness of coffee and banana.

Both drinks achieve considerable complexity without compromising their overall balance. More importantly, their unusual ingredients are not included for novelty alone. Each plays an essential role in shaping how the other flavors are experienced.

From the thoughtfully designed anniversary menu and intimate contemporary setting to the team's engaging hospitality, Danico offers a distinctive expression of modern Parisian cocktail culture.

Yet it is the execution of these two drinks that leaves the strongest impression.

Krakatoa and Café-Moutarde Banane demonstrate that a truly memorable cocktail is not necessarily defined by how many flavors it contains, but by how thoughtfully those flavors are brought together.
