The Pocket Piano is a creative cocktail introduced by the team from The Cambridge Public House (Paris) during a guest shift at BAR US Bangkok. This inventive Gimlet twist blends the natural sweetness of carrot, the savory spice of gochujang, the earthy complexity of sweet potato shochu, and the bright depth of Arquitecto tequila, resulting in a layered, multidimensional drinking experience. Founded in 2019 in the Marais district, The Cambridge Public House is the world’s first B Corp-certified bar, combining the warmth of a British pub with modern mixology. Its cocktail program emphasizes seasonality, sustainability, and regularly refreshed menus.

Tasting Notes

Aroma: A crisp sweetness of carrot intertwines with the savory spice of gochujang, supported by the earthy undertones of sweet potato shochu.

Palate: Fresh yet complex—carrot’s gentle sweetness and the umami-spice of gochujang are balanced by nutty, rounded notes from shochu, while tequila adds a bright, structured backbone.
