From South Malaysia, the “Humble Salad” offers a deconstructed version of yee sang, combining pomelo, cucumber, peanuts, and wild garlic with lime and plum sauce, symbolizing good fortune for the New Year. The “Scallop” dish draws inspiration from nasi kemuli, a southern-style wedding rice, paired with pumpkin, cabbage, and fish bladder broth. The “Tiger Prawn” dish blends smoked pineapple with curry foam for a complex, flavorful profile.
Representing North Malaysia are the “Cornfed Chicken,” paired with Shaoxing wine sauce inspired by the Fuzhou community in Perak, and the “Lamb Rack,” which incorporates Penang’s nasi kandar flavors, featuring lamb paired with curry and flatbread. Each dish is a unique fusion of culture and innovation, bringing a refreshing and distinctive experience to diners.
